valentine's day nutella recipe

Today is Valentine's Day and I won't be receiving any chocolates or going out for a fancy dinner so I didn't even attempt to make a healthy version of the classic - for this I used roasted hazelnuts, 70% fairtrade dark chocolate, double cream and icing sugar. Go hard or go home!


100g/about 1 cup (one big bar) dark chocolate - I used Green & Blacks
1 cup hazelnuts
Heaped tablespoon of cocoa powder
1/2 cup double cream
1 cup icing sugar


Preheat oven to 160C

Put nuts on baking tray and roast in the oven for about 10 minutes or until a golden brown colour and the skins are starting to crack open a bit

So this is where it gets a little messy... Wrap the roasted nuts in a clean tea towel and then rub them together. All the recipes I looked at suggested that the nuts would slip right out of their skins but I ended up getting little flakes of hazelnut skin EVERYWHERE and I ended up only taking about 70% of the skins off properly!

Melt chocolate over a bain marie.

Pulse nuts in a food processor until they reach a powdery consistency - this takes a while but the longer you wait the smoother the final resulst!

Add melted chocolate and cream to blender

Add the dry ingredients and continue to blend until mixed together and the nutella is a spreading consistency - if it begins to look too dry add more cream or a glug of vegetable/rapeseed or any other plain tasting oil! It shouldn't be too sticky and should spoon into the jar without too much trouble.

Finally, butter some toast and spread generously with the nutella, make a cup of tea and wish yourself a happy Valentine's Day!
